General:

Ingredients (4 people):
- 250g of LaCuba dried fig- 1 litre of single cream for cooking
- ½ glass of milk
- ½ glass of water
- 200 g of sugar
- 2 eggs
- 150g of brown sugar
- 50g of walnut
- 1 wineglass of Port
Preparation:
- Macerate the figs with the Port for 2 hours. Then take out the figs and boil down the Port.- Triturate the figs with half a glass of milk.
- Whip the white of the eggs in one bowl and the half a glass of single cream in another bowl.
- Make a syrup with 200g of sugar and the water.
- Whipe the yolks.
- Mix the whiped yolks, the syrup, the white of the eggs, the single cream and the triturated figs with the milk.
- Spread the reduction of Port in a mould and pour inside the mixture unyformly. Introduce into the freezer.
- Sauce: make caramel with the 150g of brown sugar and add half a glass of single cream and the walnuts. Mix and bring to the boil.
Plate Up:
Divide into portions and serve.
